This is more of a shortbread crust rather than a sugar cookie. This is one of our favorites!
Crust
4 oz. cream cheese, softened
1/2 C. butter (or margarine)
1 1/4 C. Flour
1/4 t. Salt
Cream Cheese Topping
12 oz cream cheese
1/2 C. Sugar
1 T lemon juice
1 C. Whipped topping
Crust
In a large bowl combine cream cheese and butter. Add flour and salt. Form into a ball, wrap in saran wrap and chill for about an hour. Foll out dough to form a 12 inch circle. Place on a pizza stone, or pizza pan and poke the bottom with a fork. Bake at 425 for 12-15 minutes. Cool.
Topping
Combine cream cheese, sugar, and lemon juice. Mix and then fold in whipped topping.
Top with strawberries, kiwi, peaches, blueberries etc.

So this looks delicious! I love fruit. Did I tell you that baby girl has a milk allergy? Well that means NO milk products until I am done nursing!! I know...depressing...but until then, I will enjoy looking and dreaming :)
